Sambal Penyet is a popular Indonesian chilli paste. The word penyet from the name of this dish means to press or push, referring to the preparation method in which the fresh chilli is smashed into a ready-to-eat paste. To get a smooth and creamy Sambal texture, we deseed the fresh chillies with care.

The dish is served with extra Sambal on the side, usually accompanied by fresh vegetables, cucumber, tempeh, tofu, and rice. Although it hails from East Java, Sambal Penyet is found throughout Indonesia and is popular in Singapore as well.

You can use this sauce for many others fried side-dishes.
